The Tapa Revolution in Madrid
In the heart of Madrid, the restaurant Lavagú has made a mark in local gastronomy by being crowned the best establishment in the 5th edition of the Tapas and Pinchos Championship of the Community of Madrid. This event, held annually during the Salón Gourmets, has seen culinary creativity reach new heights. The winning tapa, known as ‘Rock & callos‘, is a bold reinterpretation of the classic Madrid dish.
Carlos Domínguez Berbel, the chef and soul behind this innovative creation, has managed to transform traditional callos into a surprising format. Instead of the typical stew served in a deep plate, his proposal presents the callos inside a salty berlina, merging tradition and modernity. “It is one of the most emblematic dishes of our community,” Domínguez stated after receiving the award.
The structure of ‘Rock & callos’ is a true technical exercise. The filling consists of a classic sauté that combines onion, carrot, garlic, and tomato with chickpeas and the essential chorizo and morcilla. All of this is wrapped in a slightly sweetened doughnut-like pastry with honey before being fried. To complete this culinary masterpiece, a reduced sauce from the stew itself, enriched with butter and cocoa, is added, along with a fresh touch from lime zest and crunchy almonds.
The competition has a fundamental rule that at least 50% of the ingredients used must be local. This rule highlights the importance of regional products and has been key to standing out among the seven finalists that reached the final stage of the contest. From sophisticated tapas like ‘El Piropo’ from the Hotel Brach, to ingenious proposals like ‘La Sin Hueso!!’ from Zalamero Taberna, this year has demonstrated that high Madrid cuisine knows no bounds.
Located at Avenida de Monforte de Lemos, 42, Lavagú establishes itself as a must-visit for any food lover. With its innovative approach to traditional tapas, this restaurant not only offers a delicious bite but also a rich cultural experience that reflects the vibrant culinary landscape of Madrid today.
