A Culinary Legacy That Endures
In the heart of Madrid, Casa Botín stands as a living testament to Spain's rich gastronomic history. This iconic restaurant, which celebrated its 300th anniversary last year, is recognised as the oldest in the world. Since its opening in 1725, it has been a meeting point for illustrious figures and food lovers alike.
Recently, content creator Álvaro Linares, with over 80,000 followers on Instagram, shared his experience at this iconic establishment through a TikTok video. In it, he highlights the unique atmosphere of the place and the exceptional quality of the menu. The star dish is undoubtedly the roast suckling pig, prepared in a traditional oven that has been in operation since its inception. Linares describes how this delicacy combines a crispy skin with tender, juicy meat, making it a must-visit for those arriving in Madrid.
Accompanying this delicious dish with a cold beer or a good wine is an essential part of the culinary experience at Casa Botín. According to Linares, there is no better way to finish this meal than with an iced coffee, which adds a refreshing touch to the end of the banquet.
Casa Botín was founded by Jean Botín, a French cook who arrived in Madrid with big dreams and aspirations. Together with his Asturian wife, he opened what was initially a small inn on Cuchilleros Street. History tells that they could not use the term ‘restaurant’ due to the social restrictions of the time; so they opted to call it a ‘house of meals’. This curiosity highlights how times have changed and how Casa Botín has evolved into what it is today.
Not only the dishes are part of the appeal; the stories behind the restaurant are also fascinating. It is said that the famous painter Francisco Goya worked here as a dishwasher during his youth, adding another layer to the rich historical tapestry of the place. Moreover, personalities such as Ernest Hemingway and Benito Pérez Galdós have enjoyed their meals within these historically rich walls.
As Casa Botín continues to attract both locals and international tourists, it remains true to its roots while embracing new culinary trends. This balance between tradition and innovation ensures that it remains a reference point not only for food lovers but also for those interested in immersing themselves in Spanish culture.
